Summer Black Bean & Corn Dip

THE best bean and corn dip!! This stuff is YUM!! You can eat it all on it's own or it's perfect as a dip for chips. Make it the day before if possible because it's even better the 2nd day once the flavors meld together!
INGREDIENTS:
2 cans corn, drained & rinsed
2 cans black beans, drained & rinsed
1 red pepper, chopped
1 green pepper, chopped
1/2 bunch cilantro, chopped
1 cucumber, seeded & chopped (optional)
Salt & pepper to taste
1/2 tsp oregano
1/4 tsp tumeric
1 1/4 tsp garlic
1 1/2 TBSP vinegar
1/2 onion, chopped
DIRECTIONS:
Mix together and let sit for at least 4 hours. You can add Tabasco sauce or salsa. Other variations include adding in avocado, pinto beans or tomatoes. Serve with tortilla chips or just eat with a spoon.
